Ok since I write hardly anything down and don't usually follow recipes I will give this a try!
2 lbs of beef cut up into bite size pieces (can use chuck,stew meat,etc.)
A turn in the pan of veg. oil (just enough to brown)
4 cups of water or beef stock (Since I like a richer stew I use beef stock instead of water.
1 to 2 tablespoons of worcestershire sauce
1 clove of garlic, peeled
2 bay leafs
1 Large Vadalia onion (good this time of year!)
1 teaspoon of kosher salt
1 teaspoon of sugar
1/2 teaspoon Allspice (you don't need this)
1 teaspoon pepper (I use a few turns of the pepper grinder)
1 teaspoon paprika
Some cut up bite size carrots and celery. How much you like will work!
Brown meat in oil. Add water,worcestershire sauce,garlic,bay leaves,onion,salt,sugar,pepper,paprika and allspice. Cover and simmer oh I don't know, 1 1/2 to 2 hours. Remove bay leafs and garlic clove. Add some carrots,a celery stalk (and frozen peas if you like) continue to cook another 30-45 mins. To thicken gravy pur about 1/4 cup of water in a small bowl and add about 1 teaspoon of cornstarch, stir till smooth. Remove about 1 cup of hot liquid from stew and then pour cornstarch mixture into hot liquid and return to stew pot. If its not thick enough repeat above!
I then make sure the stew comes back up to a boil and make dumplings. It's easier most times to follow the recipe on the bisquick box for dumplings. I forget how long it tells you to cook them but, After you mix up the dumplings I drop them on the stew and cook covered for 10 mins. and uncovered for another 10 mins. and they come out great.
Now if you don't want dumplings you can serve this over noodles or rice we like it over mashed potatos sometimes. Another thing you can do is just throw in some bite size pieces of potato when you throw in the veggies.

P.S. If the stew looks to thick thin it out with some beef both or water because the dumplings will suck up alot of moisture.
You can also do this after the dumplings are done cooking and you remove so that you can see just how much liquid you may need.
