Queen of MPC
Chalupas
Chalupas
1 1/2 lbs dry pinto beans
4-5 lb pork roast or cut up chicken
7 cups water
1 med chopped onion
2 cloves garlic chopped
2 tbs chili powder
4 cubes chicken bouillon
1 tbs cumin
1 tbs oregano
4 oz green chilies
Sort and rinse beans.
Combine all ingredients in a large pot. Bring to a boil; Reduce heat, cover and simmer 5-6 hours (about 1 hour less if using chicken).
Remove meat and shred; return to pot.
Cook uncovered 20-30 minutes longer or until thickened.
Serve with tortillas and rice.

This recipe is full of wonderful flavor and easy too! You could probably fix this in the crockpot even.
Really good topped with all your favorite fillings (like guacamole )and served in homemade tortillas .

I don't see why it couldn't be frozen Des and it fed all 7 of us and I think we may have had some leftovers.....
