This week's meal plan
Tonight we're having piggies (cabbage rolls)
Mix 1lb hamburger with minute rice till it seems there is just as much rice as meat. Season with salt and pepper. Take a head of cabbage and cut around the core. Put head in a pot of water and bring to a boil to soften the leaves. AS you pull off leaves fill them with a portion of the meat/rice mixture. Roll and fold ends under. Continue till all the meat is rolled. Cut the rest of the cabbage into portions sized chucks. Place cabbage rolls and extra cabbage in a shallow baking pan or into your slow cooker along with some chunked potatoes. Barely cover the bottom of the pan with water. Season with salt and pepper. Cook in oven at 350 for an hour or in the slow cooker on high for 2-3 hours.
Tomorrow we're having leftovers
Wednesday we're having oven baked chicken, mashed potatoes and a veggie.
1 Tbsp butter
2/3 c Bisquick
1 1/2 tsp paprika
1 1/4 tsp salt
1/4 tsp pepper
3-4 lb cut up fryer chicken
Heat oven to 425. Melt butter in 9X13 pan. Stir together dry ingredients and coat chicken. Place skins down into pan of hot mealted butter. Bake for 35 minutes and turn chicken. Bake another 15 minutes or till chicken is cooked through.
Thursday we're having tilapia, some sort of rice or pasta from a box ( ) and a veggie.
Lemon baked Tilapia
4 5-7 oz fillets
4 Tbsp lite margarine melted
4 Tbsp lemon juice
1 tsp lemon zest
4 tsp flour
2 ½ Tbsp fresh parsley chopped
1 tsp pepper
1 tsp paprika
non fat cooking spray
Rinse fillet under cold water and pat dry. Preheat oven to 350. Combine melted margarine, lemon juice, lemon zest in a small bowl. Combine flour, parsley and pepper in a shallow container. Dip fillet in margarine and then dredge through flour. Place on grease baking sheet and drizzle any remaining margarine over fish. Sprinkle with paprika. Bake for 15 minues or till fish is golden brown and flakey.

Sunday we're having dumplings.
3 c flour
2 tsp baking powder
1 tsp salt
1/3 c shortening
1 egg
1/2 c milk
Sift dry ingredients together. Cut in shortening. Beat egg and add milk and egg to bowl. Mix into a dough. Roll out dumplings to 1/2 inch thickness and cut out dumplings.
FOr the soup I boil down some chicken backs and necks in a stockpot. Clean off any meat into pot and cut up an onion, a few carrots and a couple stalks of celery. Add a pinch of salt and pepper and a little bullion if needed. Boil for about 20 minutes to tender cook veggies and then slowly add the dumplings.

We're having Tamale Pie and tossed salad tonight.
Tomorrow night I'm making an Italian Pot Roast with veggies for Dave and the girls while I go out for Japanese with my friends.
Wednesday we'll be having my mom's Turkey Tettrazini at church.
Thursday night is cornmeal breaded tilapia with oven fries.
